Find out more about this series, or jump right in with part 6 of ‘Suppers from Around the World’ brings you easy European recipes that your family will love.  Each day we will have a new continent of family dinner recipes until all 7 continents are done.

EUROPE

When it comes to food, Europe may be the easiest continent. Consisting of the westernmost part of Eurasia ir borders the Artic Ocean in the north, the Atlantic to the west, the Mediterranean to the south and Asia to the east. With over 50 sovereign states, Europe has a total population of around 741 million (as of 2018).

European cuisine is so diverse because it includes all the cuisines of Europe and western countries brough there by the settlers and colonists. Being the birthplace of western civilization, Greece and Rome bring a long tradition of culture and flavor. France withstood revolution and wars to bring us Parisian cuisine. Where would be without Britain tea and crumpets? Or in this case scones?

European recipes

Here are some of our favorite European recipes that your family will love.

Baguette (French)

Nothing smells better than fresh bread! The long, thin French bread is commonly made from lean dough with a crispy crust. One of the best things about this recipe is that it is versatile and goes with most meals, or alone as a snack. Honest & Truly has an easy baguette recipe that won’t disappoint.

Wiener Schnitzel (Austria)

There is something about saying ‘Wiener Schnitzel’ that is pleasing.  The traditional Austrian (Vienna to be exact) dish, is made from veal covered with crumbs and fried. It is usually served with a slice of lemon, potato salad, French fries or buttered and boiled potatoes. The Spruce Eats has a great traditional Wiener Schnitzel recipe.

Carbonnade ‘Flemish’ Stew (Belgium)

Famous for beer and waffles, Belgium is also amazing Flemish Beef Stew, which is the national dish of Belgium. This slow cooker Eating Well Flemish Beef Stew recipe is similar to many that uses dark ale.

Lemon Chicken Soup/Avgolemono (Greece)

I love all soups and some of the best soups I have had were in the Mediterranean. It’s no wonder I go to the Mediterranean Dish for their Lemon Chicken Soup recipe. This Greek soup is light and refreshing.

The weather may be warming up but it’s never too late to enjoy soup, especially this refreshing avgolemono- a Greek lemon and rice egg soup that is nourishing, refreshing, and delicious. I used @eatbanza chickpea rice as a substitute for typical where rice and my mind was BLOWN! To make: -heat 4 cups vegetable or chicken broth in a pan over medium heat. Add 1/2 cup @eatbanza chickpea rice and bring to a boil. Reduce to simmer and continue to cook until rice is tender. -in a small bowl, separate 3 egg whites from yolk. Beat the egg whites with an electronic mixer and slowly fold in the yolk. THIS IS WHERE IT GETS TRICKY! -take 1 cup of the broth and let cook slightly. Slowly add broth to egg mixture being sure not to let the eggs curdle- constantly stir as you mix! -add egg mix back to broth/rice and add the juice of 3 lemons, salt, pepper, and lots of dill -cook another 10 minutes and serve!

Chorizo Bolognese (Spain/Italy)

This recipe is a mix of Spanish and Italian flavors. Epicurious recipe for Chorizo Bolognese with Buffalo Mozarella is quick and easy. The tasty Spanish chorizo combined with tomatoes, wine and rosemary is a flavor sensation. Their recipe calls for homemade Italian tagliatelle, but you can use green pasta or even plain spaghetti if that is what you have on hand.  This is a pasta dish for the whole family.

Churro (Spanish)

Churros seem to be growing in popularity. They are everywhere. Much to my daughter’s happiness. She loves them so much she decided we had to make them ourselves! These fried-dough pastries are traditionally Spanish and can be thin, thick, long or short and taste best fresh. It’s fun to dress them up with chocolate sauce, dulce de leche, or whatever flavor you would like. If you are a traditionalist like me, I prefer them rolled in cinnamon and sugar.
