Keto Fat Head Pizza

If you ask my son what he wants for supper he will say “Pizza”. Ask him every night of the week and his answer won’t change. But when you are an adult trying to be healthy and live a healthy low-carb lifestyle, traditional pizza isn’t in your meal plan. So we started trying keto pizza recipes. We tried cauliflower pizza and enjoyed it, but still missed the feeling, taste and texture of carbs!

That’s when we found Fat Head Pizza, legendary in the low carb world. After making it my husband was shocked that it was so tasty and wasn’t traditional pizza dough.

Remember it is very rich. We usually have keto pizza with soup or salad and veggies like asparagus which is great both on the pizza and as a side!

KETO Fat Head Pizza

This recipe gives 6 slices/servings.

Ingredients

  • 170 g grated cheese mozzarella (
  • 85 g almond flour (or 1/4 cup coconut flour)
  • 2 tbsp cream cheese
  • 1 egg
  • pinch salt
  • ½ tsp dried rosemary, garlic, pizza spice or other spices/flavorings (I have a favorite salad spice I use)
  • pizza toppings of your choosing: pepperoni, tomato, mushroom, onion, pineapple, sugar-free pizza sauce ground beef, asparagus, etc. 

 Instructions

  1. Mix the grated cheese and almond flour in a microwaveable bowl. Add the cream cheese and microwave on HIGH for 1 minute.
  2. Stir and microwave on HIGH for 30 seconds.
  3. Add the egg, salt and any seasonings. Mix gently.
  4. Place in between 2 pieces of parchment paper and roll into a circular pizza shape, square or whatever shape fits your pan. Remove the top sheet of paper and make fork holes all over the dough base so it cooks evenly and you don’t get a lot of bubbles. NOTE: If dough gets hard when you are working with it, microwave for 10-20 seconds to soften again. be careful not too long, or you will cook the egg.
  5. Slide the parchment paper/pizza onto your baking sheet/pizza stone, and bake at 220C/425F for 12-15 minutes, or until golden brown. NOTE: If you want crispy pizza dough, flip the pizze over once it’s browned.
  6. Once cooked, remove from the oven and jazz it up with toppings and pop it back in for 5 minutes. NOTE: Make sure meat is already cooked, since the 5 minutes is really just to heat up toppings and melt cheese.
