Healthy Banana Bread

I have said it before and I’ll say it again… I LOVE simple, easy to follow, healthy recipes my KIDS can make! With ADHD living in our house I am always on the lookout for non-processed dessert and snack recipes.

I found this banana bread recipe on www.77recipes.com  and everyone in our house loved it. I added dark chocolate chips, which my kids and husband loved, even though it may have affected the ‘healthiness’ of the recipe. Next time I will try walnuts or raisins. 

Healthy Banana Bread

Ingredients
2 cups whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar free applesauce
3/4 cup honey
2 eggs, beaten
3 mashed overripe bananas

Directions :

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan.

In a large bowl, combine flour, baking soda and salt. In a separate bowl, mix together applesauce and honey. Stir in eggs and mashed bananas until well blended. Add banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
Note: I put it in a glass dish and 3 smaller mini loaf dishes. I learned that if you are using a large loaf pan, only fill it half way.
